Background information
- Vinification (of the Domaine Wines): Grapes are hand harvested and pressed as whole berries. Fermentation occurs entirely in oak barrels, 30% of which are new. Aging lasts 12 months in oak followed by an additional 5 months in stainless steel prior to bottling. The complete wines are lightly fined and filtered.
- In vintage 2003: less batonnage than usual
- In vintage 2004: “did almost no bâtonnage at all”
- In vintage 2006: Per Allen Meadows: “raised the at-bottling free SO2 levels to between 40 and 45 ppm.”
- In vintage 2007: Per Allen Meadows: free SO2 dialed back to 40 ppm
