====== Raveneau ====== \\ **General information**: Raveneau's grapes are 100% hand harvested. The grapes are crushed before pressing and given a 12 hour\\ //débourbage //(gross lees settling). The fermentation takes place in large fermenters either with or without selected yeasts, depending on the vintage. The wines are placed in older barrels for 12 months and then placed in stainless steel for approximately another six months. (Note that this practice parallels that of Domaine Leflaive and Roulot, both of which also have a low incidence of premox.) New barrels (from Chassin) are used only to replace barrel stock.
